Ingredients
- 1 lb ground beef
- 1 small onion, chopped
- 3 cloves garlic, minced
- 2 cups diced potatoes (Yukon gold or red)
- 1 (14.5 oz) can diced tomatoes (with juice)
- 2 cups frozen mixed vegetables (corn, peas, carrots, green beans)
- 4 cups beef broth
- 1/2 cup heavy cream or half-and-half
- 4 oz cream cheese, softened
- Salt and pepper to taste
- Optional: 1 tsp chili powder or smoked paprika
- Optional toppings: shredded cheddar cheese, chopped parsley or green onions
Instructions
- In a large pot or Dutch oven, brown the ground beef over medium heat. Drain excess fat if needed.
- Add chopped onion and garlic; sauté until soft and fragrant (about 3–4 minutes).
- Stir in diced potatoes, canned tomatoes, frozen vegetables, and beef broth.
- Bring to a boil, then reduce heat and simmer for 15–20 minutes, or until potatoes are tender.
- Stir in softened cream cheese until fully melted and smooth.
- Add heavy cream and simmer for an additional 3–5 minutes. Season with salt, pepper, and optional spices to taste.
- Serve hot, topped with shredded cheese or fresh herbs if desired.

- Swap ground beef with turkey or sausage for variation.
- Add bell peppers or celery for more texture.
- Omit cream and cream cheese if planning to freeze; add after reheating.
