Description

Creamy Chicken with Mushrooms and Dijon Sauce is a one-skillet comfort food meal featuring seared chicken simmered in a rich, savory sauce with mushrooms, garlic, cream, and Dijon mustard. It’s fast, flavorful, and perfect for both weeknights and special dinners.


Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • 3 cloves garlic, minced
  • 8 oz mushrooms (cremini or white button), sliced
  • 1/2 cup chicken broth
  • 2 tbsp Dijon mustard
  • 3/4 cup heavy cream
  • 1 tsp fresh thyme (or 1/2 tsp dried herbs)
  • Optional: 1/4 cup grated Parmesan, chopped parsley for garnish

Instructions

  1. Season chicken with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium heat. Sear chicken 4–5 minutes per side until golden and nearly cooked through. Remove and set aside.
  3. Add mushrooms to the same skillet and sauté 5–7 minutes until browned and tender.
  4. Stir in garlic and cook 30 seconds until fragrant.
  5. Pour in chicken broth, scraping up any browned bits from the pan.
  6. Add Dijon mustard and heavy cream. Stir and simmer 2–3 minutes until slightly thickened.
  7. Return chicken to the skillet and simmer another 5–7 minutes, or until fully cooked and sauce is creamy.
  8. Optional: Stir in Parmesan and garnish with parsley before serving.
