Ingredients
- 4 boneless, skinless chicken breasts (or thighs)
- 1 tbsp olive oil
- Salt and black pepper to taste
- 3 cloves garlic, minced
- 8 oz mushrooms (cremini or white button), sliced
- 1/2 cup chicken broth
- 2 tbsp Dijon mustard
- 3/4 cup heavy cream
- 1 tsp fresh thyme (or 1/2 tsp dried herbs)
- Optional: 1/4 cup grated Parmesan, chopped parsley for garnish
Instructions
- Season chicken with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium heat. Sear chicken 4–5 minutes per side until golden and nearly cooked through. Remove and set aside.
- Add mushrooms to the same skillet and sauté 5–7 minutes until browned and tender.
- Stir in garlic and cook 30 seconds until fragrant.
- Pour in chicken broth, scraping up any browned bits from the pan.
- Add Dijon mustard and heavy cream. Stir and simmer 2–3 minutes until slightly thickened.
- Return chicken to the skillet and simmer another 5–7 minutes, or until fully cooked and sauce is creamy.
- Optional: Stir in Parmesan and garnish with parsley before serving.
