Description

The Creamy Cheddar Crab Melt Sandwich is a warm, melty, open-faced sandwich made with tender crab meat, creamy mayo, herbs, tangy mustard, and sharp cheddar. Broiled until golden and bubbly, it’s an easy, indulgent seafood comfort food.

Ingredients

  • 8 oz lump crab meat (fresh, canned, or imitation)
  • 1/4 cup mayonnaise
  • 1 tsp Dijon or whole grain mustard
  • 1 tsp lemon juice
  • 2 green onions, chopped
  • 1 tbsp fresh parsley, chopped
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp Old Bay seasoning (optional)
  • 1 cup sharp cheddar cheese, shredded
  • 4 slices bread (sourdough, rye, or sandwich rolls)
  • 1 tbsp butter (for toasting bread)
  • Optional: sliced tomato, paprika for garnish

Instructions

  1. Preheat the broiler and line a baking sheet with foil or parchment paper.
  2. In a medium bowl, mix together crab meat, mayonnaise, mustard, lemon juice, green onions, parsley, salt, pepper, and Old Bay seasoning (if using).
  3. Fold in half of the shredded cheddar cheese.
  4. Lightly butter the bread slices and toast them in a skillet until golden on one side.
  5. Place the toasted bread slices toasted-side down on the prepared baking sheet.
  6. Spoon the crab mixture evenly onto each slice of bread and top with the remaining cheddar cheese.
  7. Broil for 3–5 minutes until cheese is melted, bubbly, and lightly browned.
  8. Optional: Add sliced tomato or a sprinkle of paprika on top before serving.

Notes

  • Use sturdy bread to support the topping—sourdough or rolls work best.
  • Crab mixture can be made ahead and stored in the fridge for up to 2 days.
  • Try mozzarella or Swiss for different cheese flavor profiles.
  • Top with tomato slices before broiling for a fresh twist.
  • Serve with a green salad or soup for a full meal.
