Description

A festive, sweet-savory flatbread topped with creamy goat cheese, tart cranberries, melty mozzarella, and a drizzle of honey, baked to golden perfection and finished with fresh greens.

Ingredients

  • 1 flatbread or naan, store-bought or homemade
  • 1/2 cup shredded mozzarella cheese
  • 1/3 cup fresh cranberries, halved (or 1/4 cup dried cranberries)
  • 3 ounces goat cheese, crumbled
  • 1 tablespoon chopped fresh thyme leaves
  • 1 tablespoon honey or maple syrup, for drizzling
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Optional garnish: arugula or microgreens

Instructions

  1. Preheat oven to 400°F (200°C) and place the flatbread on a baking sheet.
  2. Brush the flatbread with olive oil to help it crisp and brown.
  3. Sprinkle shredded mozzarella evenly over the base.
  4. Add halved cranberries and crumbled goat cheese on top.
  5. Sprinkle fresh thyme and season lightly with salt and pepper.
  6. Drizzle honey or maple syrup across the flatbread.
  7. Bake for 10–12 minutes, until cheese is melted and crust is golden and crisp.
  8. Top with fresh arugula or microgreens, slice, and serve warm.

Notes

  • Swap cranberries with pear or apple slices for variation.
  • Use fig jam or balsamic glaze instead of honey for deeper sweetness.
  • Add caramelized onions or chopped walnuts for texture.
  • Blue cheese can replace goat cheese for a bolder flavor.
  • Mini versions with pita or small naan are great for parties.
  • Store leftovers in the fridge for up to 2 days; reheat in oven for crispness.
  • Can be grilled instead of baked for a smoky flavor.
