Description

Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs
  • 4 cups chicken broth
  • 2 cups water
  • 3 medium potatoes, peeled and diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt and pepper, to taste
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Sauté for about 5 minutes until softened.
  3. Stir in garlic and cook for another minute until fragrant.
  4. Add chicken, broth, water, potatoes, thyme, parsley, salt, and pepper.
  5. Bring to a boil, then reduce heat, cover, and simmer for 25–30 minutes until chicken is cooked and potatoes are tender.
  6. Remove chicken, shred with forks, and return to pot.
  7. Taste and adjust seasoning. Serve hot.
