Ingredients
- 1 lb boneless, skinless chicken breasts or thighs
- 4 cups chicken broth
- 2 cups water
- 3 medium potatoes, peeled and diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried parsley
- Salt and pepper, to taste
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Sauté for about 5 minutes until softened.
- Stir in garlic and cook for another minute until fragrant.
- Add chicken, broth, water, potatoes, thyme, parsley, salt, and pepper.
- Bring to a boil, then reduce heat, cover, and simmer for 25–30 minutes until chicken is cooked and potatoes are tender.
- Remove chicken, shred with forks, and return to pot.
- Taste and adjust seasoning. Serve hot.
