Ingredients

  • 1 pound shrimp, peeled and deveined
  • 3 medium zucchini, spiralized
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Bring a small pot of salted water to a boil.
  2. Add the shrimp and cook for 2–3 minutes until pink and opaque.
  3. Drain the shrimp and rinse under cold water to stop the cooking process, then chill.
