Ingredients

  • For the cookie dough:
  • 1/2 cup unsalted butter, softened
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder

  • For the streusel topping:
  • 1/2 cup all-purpose flour

  • 2 tbsp melted butter
  • For the glaze:
  • 1 cup powdered sugar
  • 2 tbsp milk or cream
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. To make the streusel topping, mix flour, brown sugar, cinnamon, and melted butter in a small bowl until crumbly, then set aside.
  3. Cream the softened butter with both sugars in a large bowl until light and fluffy.
  4. Beat in the egg and vanilla extract.
  5. In a separate bowl, whisk together the flour, baking powder, salt, and cinnamon, then gradually mix into the wet ingredients to form a soft dough.
  6. Scoop the dough into balls and place them on the prepared baking sheet, flattening them slightly.
  7. Press a spoonful of the streusel topping into the center of each cookie.
  8. Bake for 10–12 minutes, or until the edges are set and the tops are golden.
  9. Let the cookies cool slightly before drizzling with glaze made from powdered sugar, milk, and vanilla.
