Description

Coconut peach chicken is a tropical-inspired dish that combines tender chicken with a creamy coconut milk sauce and sweet peaches, creating a unique sweet and savory meal.


Ingredients

  • 1.5 lbs chicken breasts or thighs (boneless, skinless)
  • 2 tbsp olive oil or coconut oil
  • 3 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 cups fresh or canned peaches, sliced
  • 1 tsp fresh grated ginger or 1/2 tsp ground ginger
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • Fresh basil or cilantro, for garnish
  • Cooked rice, for serving

Instructions

  1. Heat oil in a skillet over medium heat. Sear the chicken on both sides until golden, then remove and set aside.
  2. In the same skillet, sauté chopped onion and minced garlic until soft and fragrant.
  3. Stir in coconut milk, ginger, salt, black pepper, and red pepper flakes if using.
  4. Add sliced peaches to the skillet, then return the chicken to the pan, nestling it into the sauce.
  5. Simmer gently for 15–20 minutes, or until chicken is cooked through and sauce has slightly thickened.
  6. Serve hot over cooked rice and garnish with fresh basil or cilantro.
