Description

Classic Ginger Garlic Chicken Noodle Soup is a comforting, nourishing soup made with tender chicken, aromatic broth, and hearty noodles. Infused with fresh ginger and garlic, it’s the perfect meal when you’re under the weather or just craving something warm and soothing.


Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs
  • 1 tbsp olive oil or sesame oil
  • 1 small onion, chopped
  • 3 garlic cloves, minced or smashed
  • 1 tbsp fresh ginger, sliced
  • 2 carrots, thinly sliced
  • 2 celery stalks, chopped
  • 6 cups chicken broth
  • 12 tbsp soy sauce (optional)
  • 6 oz egg noodles or rice noodles
  • Salt and pepper, to taste
  • Fresh herbs (cilantro, parsley, or green onions), for garnish
  • Lemon or lime juice (optional, for brightness)

Instructions

  1. Heat olive or sesame oil in a large pot over medium heat. Sauté onion, garlic, and ginger until fragrant and golden.
  2. Add carrots and celery. Cook for 3–4 minutes until starting to soften.
  3. Pour in chicken broth. Add soy sauce if using. Season with salt and pepper. Bring to a simmer.
  4. Add chicken and simmer gently until fully cooked, about 15–20 minutes.
  5. Remove chicken, shred with two forks, and return to the pot.
  6. Stir in noodles and cook until tender, 5–7 minutes depending on type.
  7. Taste and adjust seasoning. Add lemon or lime juice if desired.
  8. Serve hot, garnished with fresh herbs and chili flakes if preferred.

Notes

  • Cook noodles separately if making ahead to prevent them from getting mushy.
  • Use leftover or rotisserie chicken to save time.
  • Add bok choy, spinach, or mushrooms for extra vegetables.
  • For a gluten-free version, use rice noodles and gluten-free soy sauce.
  • Freeze broth separately from noodles for longer storage.
