Ingredients
For the Cinnamon Rock Candy:
- 3 3/4 cups granulated sugar
- 1 1/4 cups light corn syrup
- 1 cup water
- 1 teaspoon cinnamon oil (or to taste)
- Red food coloring (optional)
- Powdered sugar, for dusting
Instructions
- Dissolve the sugar: In a heavy saucepan, combine sugar, corn syrup, and water. Stir over medium heat until the sugar is completely dissolved. Time: 5–7 minutes
- Boil to hard crack stage: Bring the mixture to a boil without stirring. Continue boiling until the temperature reaches 300°F (hard crack stage) on a candy thermometer. Time: 25–30 minutes
- Add flavor and color: Once the desired temperature is reached, remove the pan from the heat. Carefully stir in the cinnamon oil and a few drops of red food coloring, if using. Use caution when adding the oil, as the fumes can be strong. Time: 2 minutes
- Pour and set: Immediately pour the hot mixture into a greased 15x10x1-inch baking pan. Do not spread the mixture; allow it to settle naturally. Time: 10 minutes (cooling slightly)
- Score the candy: When the candy is almost cool but still firm, use the handle of a wooden spoon or a small knife to lightly score lines across it to make breaking easier. Time: 5 minutes
- Break and dust: Once the candy is completely cooled, break it into pieces. Dust with powdered sugar to prevent sticking and store in an airtight container. Time: 15 minutes
