Cilantro Lime Chicken is zesty, juicy, and bursting with fresh flavor. The combination of lime, garlic, and cilantro transforms simple chicken into a vibrant and tender dish perfect for grilling, baking, or pan-searing.
Ingredients
- 1½ lbs boneless, skinless chicken breasts or thighs
- ¼ cup fresh cilantro, chopped
- 3 tbsp lime juice (freshly squeezed)
- 1 tsp lime zest
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp honey or agave (optional)
- ½ tsp cumin
- ½ tsp salt
- ¼ tsp black pepper
Instructions
- In a bowl, whisk together lime juice, lime zest, garlic, olive oil, chopped cilantro, cumin, salt, pepper, and honey (if using).
- Place chicken in a resealable bag or bowl and pour the marinade over it. Seal and toss to coat evenly.
- Marinate in the refrigerator for at least 30 minutes, preferably 2–4 hours for deeper flavor.
- Cook chicken on a grill, in a skillet, or bake in the oven until fully cooked and slightly charred (internal temperature 165°F).
- Let rest for 5 minutes before slicing. Garnish with fresh cilantro and lime wedges before serving.
Notes
- Add sliced jalapeños or chili flakes to the marinade for a spicy version.
- Stir in a spoonful of Greek yogurt or sour cream for a creamy variation.
- Use the same marinade for shrimp, tofu, or grilled vegetables.
- Leftover chicken keeps well for 4 days in the fridge or 2 months in the freezer.
- Reheat gently with a splash of lime juice to keep it moist.
