Description

Ingredients

  • 4 chicken thighs (bone-in or boneless)
  • 2 chipotle peppers in adobo sauce, minced
  • 1 tbsp adobo sauce
  • 3 tbsp honey
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 4 medium potatoes (Yukon gold or russet), peeled and chopped
  • 2 tbsp butter
  • 1/2 cup milk or cream
  • 1 cup smoked gouda cheese, shredded
  • Fresh parsley, chopped (optional)

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, combine chipotle peppers, adobo sauce, honey, garlic, olive oil, lime juice, salt, black pepper, and paprika to create the marinade.
  3. Coat the chicken thighs thoroughly with the marinade and let sit for 15–30 minutes if time allows.
  4. Place the chicken on a baking sheet or skillet and roast for 30–35 minutes until fully cooked and slightly caramelized.
  5. Meanwhile, boil the potatoes in salted water until fork-tender.
  6. Drain the potatoes and mash with butter and milk or cream until smooth.
  7. Stir in smoked gouda cheese until melted and creamy.
  8. Serve the mashed potatoes topped with the chipotle honey chicken.
  9. Garnish with fresh parsley if desired and serve warm.
