Ingredients
- 4 chicken thighs (bone-in or boneless)
- 2 chipotle peppers in adobo sauce, minced
- 1 tbsp adobo sauce
- 3 tbsp honey
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp lime juice
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 4 medium potatoes (Yukon gold or russet), peeled and chopped
- 2 tbsp butter
- 1/2 cup milk or cream
- 1 cup smoked gouda cheese, shredded
- Fresh parsley, chopped (optional)
Instructions
- Preheat the oven to 200°C (400°F).
- In a bowl, combine chipotle peppers, adobo sauce, honey, garlic, olive oil, lime juice, salt, black pepper, and paprika to create the marinade.
- Coat the chicken thighs thoroughly with the marinade and let sit for 15–30 minutes if time allows.
- Place the chicken on a baking sheet or skillet and roast for 30–35 minutes until fully cooked and slightly caramelized.
- Meanwhile, boil the potatoes in salted water until fork-tender.
- Drain the potatoes and mash with butter and milk or cream until smooth.
- Stir in smoked gouda cheese until melted and creamy.
- Serve the mashed potatoes topped with the chipotle honey chicken.
- Garnish with fresh parsley if desired and serve warm.
