Description
Chicken Cobbler is a cozy, hearty dish made with tender chicken, creamy gravy, vegetables, and a golden biscuit-style topping. It’s the perfect comfort food, combining the richness of a pot pie with the ease of a casserole.
Ingredients
- 3 cups cooked shredded chicken (rotisserie works great)
- 2 cups frozen mixed vegetables (peas, carrots, corn, green beans)
- 1 cup chicken broth
- 1 can (10.5 oz) cream of chicken soup
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper, to taste
- 2 cups biscuit mix (like Bisquick or homemade)
- 1 cup milk
- 2 tbsp melted butter
- 1/2 cup shredded cheddar cheese (optional)
- Fresh parsley or thyme, for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C) and grease a large baking dish.
- Layer shredded chicken and frozen vegetables evenly in the dish.
- In a bowl, whisk together chicken broth, cream of chicken soup, garlic powder, onion powder, salt, and pepper. Pour over the chicken and veggies without stirring.
- In another bowl, mix biscuit mix, milk, and melted butter until smooth. Pour gently over the filling without stirring.
- (Optional) Sprinkle cheddar cheese over the biscuit topping.
- Bake uncovered for 40–45 minutes, or until biscuit topping is golden brown and cooked through.
- Let rest 5–10 minutes before serving. Garnish with parsley or thyme if desired.
Notes
- Do not stir the layers—this keeps the cobbler-style texture.
- Rotisserie chicken makes this recipe quick and easy.
- For extra flavor, add smoked paprika, hot sauce, or cream cheese to the filling.
- Use canned biscuit dough as a shortcut for the topping.
- Best reheated in the oven to keep the biscuit topping crisp.
