Ingredients
- 4 boneless, skinless chicken breasts or thighs
- Salt and black pepper to taste
- 1 tsp garlic powder
- 1 tbsp olive oil
- 2 tbsp butter
- 8 oz mushrooms, sliced
- 3 cloves garlic, minced
- 1/2 cup chicken broth or dry white wine
- 1 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1/2 tsp dried thyme or 1 tsp fresh thyme
- Optional: chopped fresh parsley for garnish
Instructions
- Season chicken with salt, pepper, and garlic powder.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4–5 minutes per side until golden and cooked through. Remove and set aside.
- Reduce heat to medium. Add butter and mushrooms to the skillet. Cook for 6–8 minutes until mushrooms are browned.
- Add garlic and cook for 1 minute.
- Deglaze the pan with chicken broth or wine, scraping up brown bits.
- Stir in heavy cream, Parmesan, and thyme. Simmer for 3–5 minutes until slightly thickened.
- Return chicken to the skillet and spoon sauce over it. Simmer 2–3 more minutes.
- Garnish with parsley and serve hot.

- Brighten the dish with a squeeze of lemon juice at the end.
