Chicken and Mushrooms in Lush Cream Sauce is a cozy yet elegant dish made with seared chicken and a decadent garlic mushroom cream sauce. It’s quick enough for weeknights but rich and satisfying enough to serve for guests.


Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • Salt and black pepper to taste
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 8 oz mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth or dry white wine
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp dried thyme or 1 tsp fresh thyme
  • Optional: chopped fresh parsley for garnish

Instructions

  1. Season chicken with salt, pepper, and garlic powder.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4–5 minutes per side until golden and cooked through. Remove and set aside.
  3. Reduce heat to medium. Add butter and mushrooms to the skillet. Cook for 6–8 minutes until mushrooms are browned.
  4. Add garlic and cook for 1 minute.
  5. Deglaze the pan with chicken broth or wine, scraping up brown bits.
  6. Stir in heavy cream, Parmesan, and thyme. Simmer for 3–5 minutes until slightly thickened.
  7. Return chicken to the skillet and spoon sauce over it. Simmer 2–3 more minutes.
  8. Garnish with parsley and serve hot.
