A no-bake twist on a classic Italian dessert, this Cherry Amaretto Tiramisu features layers of mascarpone cream, amaretto-soaked ladyfingers, and juicy cherries. Creamy, fruity, and indulgent with a hint of almond flavor.
Ingredients
- 1 package ladyfinger cookies (savoiardi)
- 8 oz mascarpone cheese
- 1 cup heavy cream
- 1/3 cup powdered sugar
- 1/3 cup amaretto liqueur
- 1 1/2 cups pitted cherries (fresh, jarred, or thawed frozen)
- 1/3 cup cherry juice or syrup (from cherries or preserves)
- 1 teaspoon vanilla extract
- Cocoa powder or shaved chocolate (for topping)
- Optional: 1/4 teaspoon almond extract (for stronger almond flavor)
Instructions
- Whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Gently fold in mascarpone cheese until smooth and creamy.
- In a shallow bowl, combine cherry juice with amaretto (and almond extract if using).
- Briefly dip ladyfingers into the cherry-amaretto mixture and layer in a serving dish.
- Spread half of the mascarpone cream over ladyfingers and top with a layer of pitted cherries.
- Repeat with a second layer of dipped ladyfingers, the remaining cream, and more cherries on top.
- Cover and chill for at least 4 hours or overnight to set.
- Before serving, dust with cocoa powder or sprinkle with shaved chocolate.
Notes
- For a non-alcoholic version, use almond extract and cherry juice only.
- Mix cherry preserves into the mascarpone for extra cherry flavor.
- Use sour cherries for a tangy twist or dark sweet cherries for richness.
- Add crushed amaretti cookies for a crunchy surprise.
- Best chilled overnight; not recommended for freezing.
