Description

Ingredients

  • 1.5 lbs baby potatoes or russet potatoes, chopped
  • 14 oz smoked sausage (beef, pork, or turkey), sliced into rounds
  • 2 tablespoons olive oil or melted butter
  • 1 packet ranch seasoning mix (or 2 tablespoons homemade)
  • 1.5 cups shredded cheddar cheese
  • Salt, to taste
  • Black pepper, to taste
  • Sour cream (optional, for serving)
  • Chopped green onions or parsley (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly grease a large baking dish or sheet pan.
  2. In a large bowl, toss chopped potatoes with olive oil, ranch seasoning, salt, and pepper until evenly coated.
  3. Spread the potatoes in a single layer on the prepared pan and roast for 20–25 minutes, until they begin to brown and soften.
  4. Add the sliced smoked sausage to the pan and stir to combine. Return to the oven and roast for another 15–20 minutes, until the sausage is browned and potatoes are tender.
  5. Sprinkle shredded cheddar cheese evenly over the top and bake for another 5–7 minutes, until the cheese is melted and bubbly.
  6. Remove from oven and top with optional sour cream and chopped green onions or parsley before serving.
