Ingredients
- 8 oz spaghetti
- 4 cloves fresh garlic, minced
- ½ cup grated Parmesan cheese (plus extra for topping)
- 1 cup shredded mozzarella cheese
- 2 tablespoons unsalted butter
- 2 tablespoons olive oil
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
- ½ cup reserved pasta water (as needed)
Instructions
- Bring a large pot of salted water to a boil. Cook spaghetti until al dente (8–10 minutes). Drain and reserve ½ cup pasta water.
- In a skillet, heat butter and olive oil over medium heat. Add garlic and sauté 1–2 minutes until golden and fragrant.
- Lower heat and stir in Parmesan and mozzarella. Gradually add reserved pasta water, stirring until a smooth sauce forms.
- Add spaghetti to skillet and toss until fully coated. Season with salt and black pepper.
- Serve topped with extra Parmesan and fresh parsley.
