Description

Cheesy and Crunchy Doritos Chicken Casserole is a bold, comforting dish with shredded chicken, creamy sauce, melty cheese, and layers of crushed Doritos—perfect for easy dinners or potluck parties.

Ingredients

  • 3 cups cooked shredded chicken (rotisserie recommended)
  • 1 (10 oz) bag nacho cheese Doritos, lightly crushed
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1 can (10 oz) diced tomatoes with green chiles (like Rotel), drained
  • 1 tablespoon taco seasoning
  • 1/2 cup finely chopped onion (optional)
  • Chopped green onions or cilantro, for garnish

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, combine cream of chicken soup, sour cream, shredded chicken, drained tomatoes, taco seasoning, onion, and 1 cup of shredded cheese.
  3. Spread a layer of crushed Doritos over the bottom of the baking dish.
  4. Spoon the chicken mixture evenly over the chips.
  5. Top with more crushed Doritos and the remaining cheese.
  6. Bake uncovered for 25–30 minutes until hot and bubbly, and cheese is melted and golden.
  7. Let rest for a few minutes, then garnish with green onions or cilantro before serving.

Notes

  • Mix in black beans or corn for added texture and flavor.
  • Try different Doritos flavors like Cool Ranch or Flamin’ Hot for a twist.
  • Substitute sour cream with Greek yogurt for a lighter version.
  • Use Monterey Jack for an extra melty topping.
  • Prep ahead and bake later—add final layer of chips just before baking.
