Description

Ingredients

  • 3 cups carrots, grated (about 4 medium carrots)
  • 2 crisp apples, thinly sliced or julienned
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon olive oil or 1/4 cup plain yogurt
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup raisins or dried cranberries (optional)
  • 1/4 cup chopped walnuts or pecans (optional)
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  1. Peel and grate the carrots into a large mixing bowl.
  2. Core and thinly slice or julienne the apples. Toss them immediately with lemon juice to prevent browning.
  3. In a small bowl, whisk together honey or maple syrup, olive oil or yogurt, salt, and black pepper.
  4. Pour the dressing over the carrots and apples and toss gently to coat evenly.
