Ingredients
- 1 box brownie mix (or 1 batch homemade brownie batter)
- 16 oz cream cheese, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1/2 cup sour cream or heavy cream
- 1 tsp vanilla extract
- 3/4 cup caramel sauce (plus more for serving)
- Optional: 1/2 cup chocolate chips, sea salt, or chopped nuts
Instructions
- Preheat oven to 325°F (160°C). Line or grease a springform pan.
- Prepare brownie batter and spread into the pan. Bake for 15–20 minutes until just set.
- While brownies bake, beat cream cheese and sugar until smooth.
- Add eggs one at a time, then mix in sour cream and vanilla until smooth.
- Pour cheesecake mixture over partially baked brownie layer and smooth the top.
- Bake for 45–55 minutes, until the center is just set. Let cool, then refrigerate at least 4 hours or overnight.
- Before serving, drizzle with caramel sauce and top with chocolate chips, sea salt, or nuts if desired.
Notes
- Swirl caramel into cheesecake layer before baking for a marbled effect.
- Use a water bath to prevent cracking.
- Freeze slices for up to 2 months; thaw overnight in the fridge.
