Description

Caprese Chicken Gnocchi Skillet is a one-pan Italian-inspired dish combining crispy gnocchi, tender chicken, blistered tomatoes, and melty mozzarella, all finished with fresh basil and optional balsamic glaze. It’s comforting, fresh, and ready in under 30 minutes.


Ingredients

  • 1 lb gnocchi (shelf-stable, refrigerated, or fresh)
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 1/2 cups cherry or grape tomatoes, halved
  • 1 cup fresh mozzarella pearls or 1 cup shredded mozzarella
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • Balsamic glaze (optional, for drizzling)
  • Fresh basil, sliced or whole leaves (for garnish)

Instructions

  1. Heat 1 tbsp olive oil in a large skillet over medium heat. Add gnocchi and cook undisturbed for 2–3 minutes to get golden, then stir occasionally until browned. Remove and set aside.
  2. In the same skillet, add remaining olive oil if needed. Season chicken with salt and pepper and cook until golden and fully cooked through.
  3. Add minced garlic and cook for 1 minute until fragrant.
  4. Stir in tomatoes and sauté until they begin to blister and soften, about 3–4 minutes.
  5. Return the cooked gnocchi to the skillet and toss everything together.
  6. Sprinkle mozzarella over the top, cover skillet, and cook for 1–2 minutes until cheese melts.
  7. Garnish with fresh basil and drizzle with balsamic glaze if using. Serve immediately.

Notes

  • Swap chicken for Italian sausage or omit for a vegetarian version.
  • Add spinach or arugula for extra greens.
  • Use sun-dried tomatoes for deeper flavor.
  • For added creaminess, stir in a splash of cream or pesto before adding cheese.
  • Reheat in a skillet with a splash of water to prevent drying out.
