Ingredients

  • For the chicken:
  • 4 chicken breast fillets
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil for frying
  • For the garlic aioli:
  • 1/2 cup mayonnaise
  • 2 cloves garlic, minced
  • 1 teaspoon lemon juice
  • 1 teaspoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • For the sandwich:
  • 4 burger buns
  • 4 lettuce leaves
  • 1 large tomato, sliced
  • 8 pickle slices

Instructions

  1. Place the chicken fillets in a bowl with buttermilk and a pinch of Cajun seasoning. Marinate for at least 30 minutes.
  2. In a shallow bowl, mix flour, cornstarch, Cajun seasoning, paprika, garlic powder, salt, and black pepper.
  3. Remove chicken from the marinade and dredge each piece in the seasoned flour mixture, pressing lightly so the coating adheres.
  4. Heat vegetable oil in a deep skillet over medium-high heat.
  5. Fry the chicken for 5–7 minutes per side until golden brown and fully cooked.
  6. Transfer the cooked chicken to a paper towel-lined plate to drain excess oil.
  7. Prepare the garlic aioli by mixing mayonnaise, minced garlic, lemon juice, olive oil, salt, and black pepper until smooth.
  8. Toast the burger buns lightly.
  9. Spread garlic aioli on both halves of each bun.
  10. Place the crispy chicken on the bottom bun, then add lettuce, tomato slices, and pickles.
  11. Top with the upper bun and serve.

Notes

  • Marinating in buttermilk keeps the chicken tender and flavorful.
  • Cornstarch helps create an extra crispy coating.
  • Boneless chicken thighs can be used instead of chicken breasts.
  • Add hot sauce to the aioli for a spicier sandwich.
