Ingredients
- For the chicken:
- 4 chicken breast fillets
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1/4 cup cornstarch
- 1 tablespoon Cajun seasoning
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Vegetable oil for frying
- For the garlic aioli:
- 1/2 cup mayonnaise
- 2 cloves garlic, minced
- 1 teaspoon lemon juice
- 1 teaspoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- For the sandwich:
- 4 burger buns
- 4 lettuce leaves
- 1 large tomato, sliced
- 8 pickle slices
Instructions
- Place the chicken fillets in a bowl with buttermilk and a pinch of Cajun seasoning. Marinate for at least 30 minutes.
- In a shallow bowl, mix flour, cornstarch, Cajun seasoning, paprika, garlic powder, salt, and black pepper.
- Remove chicken from the marinade and dredge each piece in the seasoned flour mixture, pressing lightly so the coating adheres.
- Heat vegetable oil in a deep skillet over medium-high heat.
- Fry the chicken for 5–7 minutes per side until golden brown and fully cooked.
- Transfer the cooked chicken to a paper towel-lined plate to drain excess oil.
- Prepare the garlic aioli by mixing mayonnaise, minced garlic, lemon juice, olive oil, salt, and black pepper until smooth.
- Toast the burger buns lightly.
- Spread garlic aioli on both halves of each bun.
- Place the crispy chicken on the bottom bun, then add lettuce, tomato slices, and pickles.
- Top with the upper bun and serve.

- Marinating in buttermilk keeps the chicken tender and flavorful.
- Cornstarch helps create an extra crispy coating.
- Boneless chicken thighs can be used instead of chicken breasts.
