Ingredients
- 1 ball fresh burrata cheese
- 1½ cups cherry tomatoes or diced heirloom tomatoes
- 1 handful fresh basil leaves, chopped or torn
- 1 garlic clove, halved
- 2–3 tbsp olive oil
- 1–2 tsp balsamic glaze or vinegar (optional)
- Salt and black pepper, to taste
- 1 baguette or loaf of crusty sourdough bread, sliced
Instructions
- Toast the bread: Preheat oven to 400°F or heat a grill. Toast the bread slices until golden and crisp on both sides, about 5–7 minutes total.
- Rub with garlic: While still warm, rub each toasted slice with the cut side of the garlic clove.
- Prepare tomato topping: In a bowl, mix tomatoes with olive oil, salt, pepper, and torn basil. Let sit for 5–10 minutes for the flavors to blend.
- Assemble bruschetta: Spoon the tomato mixture onto each slice of bread. Tear burrata into small pieces and place on top of each slice.
- Finish and serve: Garnish with more basil and a drizzle of olive oil or balsamic glaze. Serve immediately while bread is crisp and burrata is soft.
Notes
- Assemble just before serving to keep the bread from getting soggy.
- Add pesto under the burrata for extra flavor.
