Description

Ingredients

  • 1.5 lbs boneless chicken breast or thighs, cut into bite-size pieces
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 1 cup all-purpose flour
  • 1/4 cup cornstarch (optional)
  • 1 egg
  • 1/2 cup milk or buttermilk
  • 1/2 cup buffalo sauce
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • Oil for frying
  • 12 oz twisted pasta (rotini, cavatappi, or fusilli)
  • 1 cup heavy cream
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 cup Parmesan cheese, grated
  • 1 tbsp Cajun seasoning
  • 1 tbsp dry ranch seasoning mix
  • Salt and pepper, to taste
  • Fresh parsley (optional, for garnish)

Instructions

  1. Season chicken pieces with garlic powder, salt, and pepper.
  2. In one bowl, whisk egg and milk; in another, mix flour and cornstarch.
  3. Dip chicken into egg mixture, then dredge in flour mixture.
  4. Fry chicken in hot oil until golden and cooked through. Drain on paper towels.
  5. In a skillet, melt butter and sauté minced garlic. Add buffalo sauce and stir well.
  6. Toss fried chicken bites in buffalo garlic sauce until coated.
  7. Cook pasta in salted boiling water until al dente. Drain and set aside.
  8. In a large skillet, melt butter and sauté garlic until fragrant. Add cream, Cajun seasoning, and ranch seasoning. Simmer for a few minutes.
  9. Stir in Parmesan cheese until melted and creamy. Add cooked pasta and toss to coat.
  10. Adjust seasoning with salt and pepper, and garnish with parsley if desired.
  11. Serve pasta with buffalo garlic chicken bites on top or alongside. Drizzle with extra ranch or buffalo sauce if desired.
