Broccoli Cheese Stuffed Chicken is a flavorful, juicy main dish featuring chicken breasts filled with a creamy, cheesy broccoli mixture. It’s seared until golden and baked to perfection for a satisfying, low-carb meal.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup broccoli florets, finely chopped and lightly steamed
- 1/2 cup shredded cheddar cheese
- 2 oz cream cheese, softened
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and black pepper to taste
- 1/2 tsp paprika
- 2 tbsp olive oil or butter
- Toothpicks or kitchen twine for securing
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix broccoli, cheddar cheese, cream cheese, garlic powder, onion powder, salt, and pepper until well combined.
- Cut a pocket into each chicken breast without slicing all the way through.
- Stuff each pocket with the broccoli cheese mixture and secure with toothpicks.
- Season the outside of the chicken with salt, pepper, and paprika.
- Heat olive oil in a skillet over medium heat. Sear the chicken for 2–3 minutes per side until golden.
- Transfer skillet to the oven or place chicken in a baking dish. Bake for 20–25 minutes, until the chicken is cooked through.
- Let rest a few minutes before serving.
Notes
- Add cooked bacon or sun-dried tomatoes to the filling for extra flavor.
- Swap cheddar with mozzarella or Swiss cheese for variety.
- Include red pepper flakes or jalapeños for a spicy kick.
- Can be prepped ahead and refrigerated for up to 24 hours before baking.
