Ingredients
- 2 cups fresh blackberries (plus extra for garnish)
- 1/3 cup granulated sugar
- 1 tbsp lemon juice
- 1 tsp unflavored gelatin powder
- 2 tbsp cold water
- 1 cup heavy whipping cream
Instructions
- Blend blackberries until smooth. Strain to remove seeds if desired.
- In a saucepan, combine blackberry puree, sugar, and lemon juice. Heat until sugar dissolves.
- In a small bowl, sprinkle gelatin over cold water and let bloom for a few minutes.
- Stir bloomed gelatin into warm blackberry mixture until dissolved. Let cool to room temperature.
- In a separate bowl, whip heavy cream until soft peaks form.
- Gently fold cooled blackberry mixture into whipped cream until fully combined.
- Spoon mousse into serving glasses and refrigerate for at least 2 hours, or until set.
