Description

Ingredients

  • 2 large flour tortillas
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1 cup cooked protein (ground beef, chicken, beans, or tofu)
  • 1/2 cup cooked rice
  • 1/4 cup salsa or pico de gallo
  • 2 tbsp sour cream or crema
  • 1 tbsp olive oil or butter
  • Optional: diced onions, jalapeños, avocado, cilantro

Instructions

  1. Warm a tortilla in a skillet to make it pliable.
  2. Layer shredded cheese over half of the tortilla.
  3. Add cooked protein, rice, salsa, sour cream, and any optional ingredients on top of the cheese.
  4. Sprinkle more cheese over the fillings to help bind.
  5. Fold in the sides and roll up tightly from the cheese side to enclose the fillings.
  6. Brush the outside of the burrito with olive oil or melted butter.
  7. Cook in a skillet over medium heat, pressing and flipping occasionally, until golden and crispy on all sides, about 3–4 minutes per side.
