Description

A cozy and sweet breakfast bake made with custard-soaked bread and juicy mixed berries. This Berry French Toast Casserole is perfect for brunch, holidays, or make-ahead breakfasts.


Ingredients

  • 1 loaf day-old brioche, challah, or French bread (about 12 cups), cut into 1-inch cubes
  • 2 cups mixed berries (fresh or frozen)
  • 6 large eggs
  • 1 1/2 cups milk
  • 1/2 cup heavy cream
  • 1/3 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Butter (for greasing the baking dish)
  • Optional: powdered sugar or maple syrup for serving

Instructions

  1. Lightly grease a 9×13-inch baking dish with butter.
  2. Add half the bread cubes to the dish, then scatter half the berries on top. Repeat with remaining bread and berries.
  3. In a large bowl, whisk together eggs, milk, cream, sugar, vanilla, cinnamon, and salt.
  4. Pour the custard evenly over the bread and press down gently to soak.
  5. Cover and refrigerate overnight, or let sit for at least 30 minutes.
  6. When ready to bake, preheat oven to 350°F (175°C).
  7. Bake uncovered for 45–50 minutes, or until golden and set.
  8. Let cool slightly, then serve with powdered sugar or maple syrup.

Notes

  • Use stale bread so it absorbs the custard better.
  • Frozen berries can be added directly—no need to thaw.
  • Chilling overnight enhances flavor, but a 30-minute soak works if you’re short on time.
  • Top with streusel or sliced almonds for added texture.
