Description

A warm and comforting berry baked oatmeal made with rolled oats, juicy mixed berries, and a lightly sweet custard base. This wholesome breakfast bakes into a soft, slightly cake-like dish that’s perfect for meal prep and cozy mornings.


Ingredients

  • 2 cups rolled oats
  • 1 1/2 cups mixed berries (fresh or frozen)
  • 1 3/4 cups milk (dairy or non-dairy)
  • 2 large eggs
  • 1/3 cup maple syrup or honey
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 2 tbsp melted butter or coconut oil
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a large bowl, combine the rolled oats, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together the milk, eggs, maple syrup or honey, vanilla extract, and melted butter or coconut oil until smooth.
  4. Pour the wet mixture into the bowl with the dry ingredients and stir until well combined.
  5. Fold in most of the berries, reserving a small handful for topping. Stir in the chopped nuts if using.
  6. Transfer the mixture to the prepared baking dish and spread it evenly.
  7. Sprinkle the remaining berries over the top.
  8. Bake for 30–35 minutes until the top is lightly golden and the center is set.
  9. Allow the baked oatmeal to cool slightly before slicing and serving.

Notes

  • Frozen berries can be used directly without thawing.
  • Mashed banana can be added for extra sweetness and a softer texture.
  • Sliced almonds or granola sprinkled on top add extra crunch.
  • Add a splash of milk when reheating to keep the oatmeal moist.
  • Serve with yogurt, extra berries, or a drizzle of maple syrup for added flavor.
