Ingredients
- 2 cups rolled oats
- 1 1/2 cups mixed berries (fresh or frozen)
- 1 3/4 cups milk (dairy or non-dairy)
- 2 large eggs
- 1/3 cup maple syrup or honey
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 2 tbsp melted butter or coconut oil
- 1/4 cup chopped nuts (optional)
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
- In a large bowl, combine the rolled oats, baking powder, cinnamon, and salt.
- In another bowl, whisk together the milk, eggs, maple syrup or honey, vanilla extract, and melted butter or coconut oil until smooth.
- Pour the wet mixture into the bowl with the dry ingredients and stir until well combined.
- Fold in most of the berries, reserving a small handful for topping. Stir in the chopped nuts if using.
- Transfer the mixture to the prepared baking dish and spread it evenly.
- Sprinkle the remaining berries over the top.
- Bake for 30–35 minutes until the top is lightly golden and the center is set.
- Allow the baked oatmeal to cool slightly before slicing and serving.
Notes
- Frozen berries can be used directly without thawing.
- Mashed banana can be added for extra sweetness and a softer texture.
- Sliced almonds or granola sprinkled on top add extra crunch.
- Add a splash of milk when reheating to keep the oatmeal moist.
- Serve with yogurt, extra berries, or a drizzle of maple syrup for added flavor.
