Ingredients

  • 12 oz cheese tortellini (fresh, refrigerated, or frozen)
  • 1 tbsp olive oil or butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 12 oz ground beef
  • Salt and black pepper, to taste
  • 1/2 tsp Italian seasoning or dried herbs (optional)
  • 1 cup heavy cream (or thickened cream / half‑and‑half)
  • 3/4 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the tortellini according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil or butter over medium heat. Sauté the chopped onion until soft. Add garlic and cook for another 30 seconds until fragrant.
  3. Add the ground beef, season with salt, pepper, and Italian seasoning (if using), and cook until browned, breaking it up with a spoon.
  4. Pour in the cream and bring to a gentle simmer.
  5. Stir in the grated Parmesan cheese. Let the sauce thicken slightly (about 2–3 minutes).
  6. Add the cooked tortellini to the skillet, gently tossing to coat them in the creamy sauce.
  7. Let everything simmer together for 2–3 minutes so flavors meld. Taste and adjust seasoning if needed.
  8. Garnish with chopped parsley and serve hot, with extra Parmesan if desired.

Notes

  • Frozen tortellini works great — just be sure to cook per package directions before adding to sauce.
  • For a lighter sauce, substitute part of the heavy cream with milk or half‑and‑half; you may need a bit more Parmesan to help thicken it.
  • To add more veggies or make it a fuller meal, stir in baby spinach, peas, or mushrooms just before adding the tortellini.
  • For a spicy kick, add red pepper flakes when sautéing onion and garlic.
