Description
Beef, onion & mushroom stir-fry over rice is a quick and savory one-pan meal with tender beef, caramelized onions, and juicy mushrooms tossed in a rich, umami-packed sauce. Served over warm rice, it’s cozy, filling, and done in under 30 minutes.
Ingredients
- 1 lb thinly sliced beef (flank steak, sirloin, or other tender cut)
- 1 medium onion, thinly sliced
- 8 oz mushrooms (button, cremini, or shiitake), sliced
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated (optional)
- 2 tablespoons oil for cooking (canola, vegetable, or sesame)
- Salt and black pepper to taste
- For the sauce:
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon brown sugar or honey
- 1 teaspoon cornstarch
- 1/4 cup water or low-sodium beef broth
- 1/2 teaspoon sesame oil (optional)
- For serving:
- Steamed white or brown rice
- Chopped green onions or sesame seeds (optional garnish)
Instructions
- In a small bowl, whisk together soy sauce, oyster sauce, brown sugar, water, and cornstarch. Set aside.
- Heat 1 tablespoon oil in a large skillet or wok over medium-high heat.
- Add beef in a single layer, season with salt and pepper, and sear for 2–3 minutes until browned. Remove and set aside.
- Add another splash of oil to the pan. Sauté onions and mushrooms for about 5 minutes until softened and lightly browned.
- Add garlic and ginger (if using) and stir for 30 seconds.
- Return beef to the pan and pour in the sauce. Toss to coat and let simmer for 2–3 minutes until sauce thickens.
- Serve hot over rice, garnished with green onions or sesame seeds if desired.
Notes
- Add broccoli, bell peppers, or snap peas for more veggies.
- Swap beef for chicken, pork, or tofu for variety.
- Stir in chili garlic sauce or red pepper flakes for heat.
- Use pre-sliced mushrooms to save time.
- For more depth, add a splash of rice vinegar or mirin to the sauce.
