Description

BBQ Chicken Quesadillas are a quick, cheesy, flavor-packed meal made with smoky BBQ chicken, melty cheese, and crispy golden tortillas. Perfect for weeknights, game days, or easy lunches, they come together fast with simple ingredients and big flavor.


Ingredients

  • 2 cups cooked chicken, shredded or chopped
  • 1/2 cup BBQ sauce (more to taste)
  • 1 1/22 cups shredded cheese (cheddar, Monterey Jack, mozzarella, or blend)
  • 46 medium or large flour tortillas
  • 1/4 cup red onion, thinly sliced (optional)
  • 12 tablespoons olive oil or butter (for cooking)
  • Fresh cilantro or green onions, chopped (optional for garnish)
  • Sour cream or ranch, for dipping

Instructions

  1. In a bowl, mix the cooked chicken with BBQ sauce until fully coated.
  2. Lay a tortilla flat and sprinkle cheese over one half.
  3. Add a layer of BBQ chicken and a few red onion slices, then top with another small handful of cheese.
  4. Fold the tortilla in half to close the quesadilla.
  5. Heat oil or butter in a skillet over medium heat.
  6. Cook each quesadilla for 2–3 minutes per side, until golden brown and the cheese is melted.
  7. Remove from skillet, rest for a minute, then slice into wedges.
  8. Garnish with cilantro or green onions and serve with sour cream, ranch, or your favorite dipping sauce.
