Ingredients
- 2 cups canned white beans, drained and rinsed
- 1 cup artichoke hearts, chopped
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 clove garlic, minced
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp fresh parsley, chopped
Instructions
- Drain and rinse the white beans, then place them in a large mixing bowl.
- Add the chopped artichoke hearts, halved cherry tomatoes, and thinly sliced red onion.
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper to make the dressing.
- Pour the dressing over the salad ingredients.
- Gently toss everything together until the beans and vegetables are evenly coated.
- Sprinkle chopped fresh parsley over the top.
- Let the salad sit for about 10 minutes to allow the flavors to blend before serving.
Notes
- Cannellini beans or great northern beans work best because of their creamy texture.
- Crumbled feta cheese can be added for extra creaminess and flavor.
- Chopped cucumbers or bell peppers add extra crunch and freshness.
