Ingredients
- 3 ripe bananas, mashed
- 1/3 cup melted butter or oil
- 1/2 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups all-purpose flour
- 3/4 cup chocolate chips (plus extra for topping)
Instructions
- Preheat oven to 350°F (175°C). Line or grease a 12-cup muffin tin.
- In a large bowl, mash bananas. Stir in melted butter, brown sugar, egg, and vanilla until well combined.
- Sprinkle baking soda and salt over the mixture and stir.
- Add flour and gently fold in until just combined.
- Fold in chocolate chips.
- Divide batter evenly into muffin cups and top with extra chocolate chips.
- Bake for 18–22 minutes or until a toothpick comes out clean (melted chocolate is fine).
- Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Add chopped nuts for crunch (walnuts or pecans work great).
