Description

Air Fryer Blueberry Cottage Cheese Toast is a quick, nutritious breakfast or snack featuring crisp toast topped with creamy cottage cheese and juicy blueberries. It’s high in protein, naturally sweet, and easy to make in under 15 minutes.

Ingredients

  • 2 slices of sturdy bread (sourdough, whole grain, or multigrain)
  • 1 cup cottage cheese (full‑fat or low‑fat)
  • 1/2 cup fresh or frozen blueberries
  • 12 teaspoons honey or maple syrup (optional)
  • 1/4 teaspoon ground cinnamon (optional)
  • Pinch of salt
  • Olive oil spray or a little butter (optional, for crisping edges)

Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. Lay the bread slices flat and press down lightly in the center to create a shallow well.
  3. Spread cottage cheese evenly over the center of each slice.
  4. Top with blueberries, gently pressing them into the cottage cheese.
  5. Drizzle honey or maple syrup over the top and sprinkle with cinnamon and a pinch of salt if desired.
  6. Optionally, spray the edges of the bread with olive oil or brush with a little butter for extra crispness.
  7. Place the toasts in the air fryer basket and cook for 6–8 minutes, until the edges are golden and the cottage cheese is set.
  8. Let cool slightly before serving. Enjoy warm.

Notes

  • Swap blueberries for sliced strawberries, raspberries, or mixed berries.
  • Add granola after cooking for crunch.
  • Stir a little vanilla or lemon zest into the cottage cheese for extra flavor.
  • For a savory twist, skip the sweet toppings and use tomatoes, herbs, and a drizzle of olive oil.
