Description
Air Fryer Blueberry Cottage Cheese Toast is a quick, nutritious breakfast or snack featuring crisp toast topped with creamy cottage cheese and juicy blueberries. It’s high in protein, naturally sweet, and easy to make in under 15 minutes.
Ingredients
- 2 slices of sturdy bread (sourdough, whole grain, or multigrain)
- 1 cup cottage cheese (full‑fat or low‑fat)
- 1/2 cup fresh or frozen blueberries
- 1–2 teaspoons honey or maple syrup (optional)
- 1/4 teaspoon ground cinnamon (optional)
- Pinch of salt
- Olive oil spray or a little butter (optional, for crisping edges)
Instructions
- Preheat the air fryer to 375°F (190°C).
- Lay the bread slices flat and press down lightly in the center to create a shallow well.
- Spread cottage cheese evenly over the center of each slice.
- Top with blueberries, gently pressing them into the cottage cheese.
- Drizzle honey or maple syrup over the top and sprinkle with cinnamon and a pinch of salt if desired.
- Optionally, spray the edges of the bread with olive oil or brush with a little butter for extra crispness.
- Place the toasts in the air fryer basket and cook for 6–8 minutes, until the edges are golden and the cottage cheese is set.
- Let cool slightly before serving. Enjoy warm.
Notes
- Swap blueberries for sliced strawberries, raspberries, or mixed berries.
- Add granola after cooking for crunch.
- Stir a little vanilla or lemon zest into the cottage cheese for extra flavor.
- For a savory twist, skip the sweet toppings and use tomatoes, herbs, and a drizzle of olive oil.
