Ingredients
- 2 cups cooked chicken, shredded or diced (rotisserie works great)
- 3 tbsp unsalted butter
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 1/4 cup all-purpose flour
- 4 cups chicken broth
- 2 cups milk or half-and-half
- 1 cup frozen peas
- 2 medium potatoes, peeled and diced
- 1 tsp dried thyme
- 1 tsp dried parsley or Italian seasoning
- Salt and black pepper to taste
- Optional: 1/2 cup heavy cream for extra richness

Instructions
- In a large pot, melt butter over medium heat. Add onion, carrots, and celery; cook 5–6 minutes until softened.
- Stir in garlic and cook for 30 seconds.
- Sprinkle in flour, stirring constantly for 1 minute to form a roux.
- Slowly whisk in chicken broth to avoid lumps.
- Add potatoes, thyme, parsley, salt, and pepper. Bring to a simmer and cook 10–12 minutes, until potatoes are tender.
