Description
This Easy Chicken Cobbler Dinner Casserole combines tender chicken, creamy vegetables, and a golden biscuit-like topping for a comforting, all-in-one meal. It’s simple to make, uses pantry staples, and is perfect for busy weeknights or family dinners.
Ingredients
- 3 cups cooked shredded or diced chicken
- 3 cups frozen mixed vegetables (peas, carrots, corn, green beans)
- 1 can (10.5 oz) cream of chicken soup
- 1 cup chicken broth
- 2 cups baking mix (such as Bisquick)
- 1 1/2 cups milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup butter, melted
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Spread shredded chicken evenly in the bottom of the dish.
- Layer frozen mixed vegetables over the chicken.
- In a bowl, whisk together cream of chicken soup and chicken broth. Pour evenly over chicken and vegetables.
- In another bowl, combine baking mix, milk, salt, and pepper. Mix until just combined.
- Spoon or pour baking mix batter evenly over the top without stirring layers together.
- Drizzle melted butter over the casserole.
- Bake uncovered for 40–45 minutes, until the topping is golden brown and cooked through.
- Let rest for 10 minutes before serving.
Notes
- Swap mixed vegetables for peas and carrots, or add mushrooms for variety.
- Mix shredded cheddar into the chicken layer for extra cheesiness.
- Use cream of mushroom soup instead of cream of chicken for a flavor twist.
- Adjust baking mix ratio for a fluffier, more biscuit-like topping.
- Add hot sauce or pepper jack cheese for a spicier version.
