20-minute creamy mushroom chicken is a fast and comforting one-pan meal featuring juicy chicken breasts smothered in a rich, savory mushroom cream sauce. Perfect for weeknights and packed with flavor.
Ingredients
- 2 boneless, skinless chicken breasts, thinly sliced or pounded
- Salt and pepper, to taste
- 2 tbsp olive oil or butter
- 2 cloves garlic, minced
- 8 oz fresh mushrooms (cremini or button), sliced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
- Optional: 1/2 tsp dried thyme or Italian seasoning
Instructions
- Season chicken with salt and pepper on both sides.
- Heat olive oil or butter in a large skillet over medium-high heat. Sear chicken for 3–4 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, sauté mushrooms for 4–5 minutes until golden and softened. Add garlic and cook for 30 seconds.
- Pour in chicken broth, scraping up browned bits. Simmer for 1 minute.
- Stir in heavy cream and Parmesan cheese. Add thyme or Italian seasoning if using. Simmer until sauce thickens, about 3–5 minutes.
- Return chicken to pan and coat with sauce. Simmer for another minute or two until heated through.
- Garnish with chopped parsley and serve hot.

- Add spinach or sun-dried tomatoes for variation.
- Use boneless thighs for a richer flavor.
- Half-and-half or milk with a thickener can substitute cream for a lighter version.
- Store leftovers up to 3 days and reheat gently with added liquid.
